Figuring I needed to branch out besides using recipes from Recipezaar and AllRecipes, I went corporate. Ha ha, not really, but the recipe on the Ocean Spray Web site for this cranberry cornbread scones sounded interesting.
The key to making it a scone is to make sure you knead and add flour before you put it in the baking pan. I put probably another 1/4-1/2 cup of flour while I was kneading.
The scones did turn out really well and had a nice flavor. Don’t worry, you don’t really taste the cornmeal.

Actually you were corporate before. Recipezaar is owned by Food Network which is owned by Scripps [Publisher of daily newspapers in several states. Also owns broadcast stations, Scripps Howard News Service, television networks, and United Media. per their website with bad spelling corrected. ] That’s Corporate. It’s just not completely food corporate but mass media corporate.

Yep, true on Recipezaar. And for those who are wondering about AllRecipes, also corporate.
It’s owned by Reader’s Digest Association — owners of Rachel Ray’s magazine, Reader’s Digest, and Taste of Home.
But my original reason for joking about “going corporate” was that while Recipezaar and AllRecipes are owned by corporations, the people who post recipes are not always corporate recipes (meaning tested in a corporate kitchen with corporate bakers). In fact, many times it’s folks who have created recipes or are sharing their family recipes.
Don’t get me wrong — I don’t think there’s anything wrong with either image. In fact, anyone know of a corporation looking for a baker? That’d be a cool job!
