What do I really know about authentic Italian meatballs? Not much…although I have been to Italy (but it was years ago).
So I searched for a recipe that claimed authenticity and was verified by others. Here it is.
This was a very easy recipe to make. But what I found the hardest was restraining myself from devouring them while they they were cooking — they smelled delicious!
I used very lean beef and ground turkey, although I believe most state that real meatballs use beef, lamb, and pork. I am trying to be healthy though so I used the lower-fat meats. Since I used 1 lb each of the beef and turkey, I had to double the rest of the ingredients using more egg, milk, etc. It still worked well.
The taste? Wow.

I tried this recipe a couple of weeks ago…Fabulous! I substitute a wee bit of the milk with the last glub glub of chianti at the bottom of a bottle and I think it added a little womp.
