I received the Southern Living’s Complete Do-Ahead Cookbook and never made anything out of it — until one day, I decided to try out their Jumbo Cookie recipe.
It’s one of the most popular cookies I’ve ever made and always disappears quickly. The cookies are moist, rich, and delicious. Plus, they are hearty cookies — big and thick (like little saucers). I promise you won’t go wrong!
- 2 c creamy peanut butter
- 1/2 c butter or margarine (soften)
- 1 c sugar
- 1 c plus 2 TBSP firmly packed brown sugar
- 3 eggs
- 3/4 tsp light corn syrup
- 1/4 tsp vanilla extract
- 4 1/2 c regular oats, uncooked
- 2 tsp baking soda
- 1/4 tsp salt
- 1 c candy-coated chocolate pieces (opt)
- 1 (6-oz) package semisweet chocolate morsels
Mix everything together really well. Dough should be stiff. Pack dough into a 1/4 c measure (think golf ball size) and 4 inches apart onto a lightly greased cookie sheet. Lightly press down the dough. Bake at 350 for 10-12 minutes.
Yield: 2 1/2 dozen
Seriously — these will go fast. Be prepared!
**Update 1/11 — Some may like Curtis Stone’s recipe for chocolate & peanut butter cookies a bit more. His cookies aren’t as “hearty” as these, but they are really good.**
