When I saw this recipe for flourless peanut butter cookies, I thought it was a joke.  I didn’t think you could make a good cookie using only 3 ingredients. 

Well, the cookies came out gorgeous, but they were a bit chewy.  I think next time, I’ll press them down so they’re not “fluffy.”  But the overall flavor of the cookie was very peanut buttery and I thought they were pretty good. 

Flourless Peanut Butter Cookies

I did make a few modifications:

  • Instead of 1 cup of white sugar, I used 1/2 cup of brown sugar and 1/4 cup of white sugar
  • I used Jiffy creamy peanut butter

Then I rolled them (golf ball sized) and baked for 12-15 minutes.
