**Update 5/16 – I’ve made this a couple of times since I originally posted.  Spreading the mixture thinly was a challenge until I took my rubber spatula and sprayed some non-stick cooking spray.  Then it was crazy easy.  But make sure it’s a thin layer or you’ll never have enough for to cover! **

I think baking is a lot of fun, especially when you branch out to make new stuff.  I’ve never made a coffee cake before, but figured what the heck?  

I found this recipe and thought it was pretty easy.  It was very moist and sweet — a perfect combo! 

While the recipe called for a 13 x 9 pan, it was a bit tough to cover.  I’d suggest laying a very thin layer of the dough, instead of pouring half the dough.  Then you should sprinkle half of the cinnamon-sugar mixture.  Then cover with the remaining dough.
