I made the pumpkin spice bread which called for 2 cups of pumpkin puree, but then realized that I had 1 cup remaining.

So that’s when I found this easy recipe for pumpkin chocolate chip cookies.  They were fluffy with a light pumpkin and spice flavor.  Using a medium scoop, this recipe actually made about 40 cookies. 

I really liked them and can see them going fast.  Thankfully, they’re boxed up and on their way to someone else.  Phew!
