My quest to use up honey continues. Why did I buy so much? Oh well…
Anyway, I found this recipe for healthy honey oatmeal cookies. These were pretty easy to make, but they were also really sweet — or at least for me.
I’d definitely cut down on the brown sugar and if you want to add chocolate chips or any other sweets to the dough, make sure you cut down even more.
I used a medium scoop for the dough and it only made about 15 cookies. Also, you’ll want to press down the cookies dough ball — unless you want a dome cookie.

Sure… this one I actually got from a friend in Israel, but it’s worked well for me. I sometimes add a little cardamom, I don’t know if you’re a fan. I also sometimes become a giant heathen and top with fruit rather than almonds. Shh! Don’t tell!
Cake:
1/3 cup butter, melted
3 eggs
1/2 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon baking powder
1/2 cup+1tb flour
Topping
1/2 cup butter
1/2 cup sugar
1/3 cup honey
1/2 cup slivered almonds
1/2 teaspoon cinnamon
Butter a 10″ pan. Preheat the oven to 400F.
Beat the eggs, sugar and vanilla until it whitens. Add the melted butter and mix well.
Sift the flour and baking powder and add to the previous mixture, mix gently.
Pour in the prepared pan and bake 10-12 min.
Meanwhile prepare the topping.
Melt the butter on med heat. Add the rest of the ingredients and bring to a boil, stirring constantly.
Pour the topping gently on the cake and return it to the oven for another 15-20 min.
