One of my favorite muffins is the jelly muffin — or “surprise” muffin.  You make a plain dough and fill it half way with whatever jelly, preserve, or jam (and yes, there’s a difference!) you want. 

In my case, I used a very lightly flavored banana jelly.  I would recommend using a stronger flavor — I usually find preserves or jams work better.  I just wanted to get rid of this banana jelly I had in my fridge. 

Here’s the recipe:

  • 1 egg
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 2 cups all purpose flour
  • 1/3 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp Kosher salt

Scoop a little dough (1 tsp) on the bottom; put 1 tsp of jelly/jam/preserves; and fill with dough on the top.  Bake at 400 degrees for 12-18 minutes.
