Wow, now this was quite the find!  I loved this cranberry oat bread.  It was a perfect combination of crunchy, sweet, and a bit healthy.  This recipe was super simple to make — if you switched out the oil for applesauce, you could even make it even healthier.

I wanted to bake it in my loaf pan, but it was dirty (and I was lazy and didn’t want to wash it).  So I baked it in my little cake pan. 

This would be great for guests — and throw on a little cream cheese, yum.
