With the summer here, I’ve been starting to test out no-cooking recipes.  And one item I love to eat is Ceviche.

I cut this recipe in half since I was only cooking for 2.  I had a lot still leftover and ate it 3 days later — and it was still really yummy. 

It was fresh, simple, and so good.  Plus, no cooking!
