I’m the first one to admit that in the morning, I have a problem making a healthy breakfast.  So I’ve been trying to think of ways to make breakfast easy.

I came up with this healthy egg “muffins” recipe.  While I made it healthy by using only a couple of egg yolks, spinach, and feta, you could put anything.  Bacon, sausage, cheese, hash browns, etc — all would be great in this! 

  • 7 egg whites
  • 2 egg yolks
  • 1/4 cup of milk
  • 1 cup of frozen spinach
  • 1/4 cup of crumbled feta
  • Salt & pepper to taste

Mix the egg whites, egg yolks, and milk so they’re beat well together.  Then add the spinach, feta, and salt & pepper together.  Be careful to not add too much salt if you use feta — it’s naturally salty!

Then spray muffin tins very well with non-stick spray.  If you’d rather, you could probably do this in a loaf pan too — then you could slice off pieces in the morning to put between toast. 

Pour the mixture in the tins until almost full.  Then bake at 350 for 15-25 minutes until the egg is cooked and there’s a light brown color.  

This makes 8 “muffins.”

It’s really good, easy, and takes less than 30 seconds to heat up in the microwave in the morning.  A healthy breakfast idea!
